Course Overview
Baking bread for the first time is one of life’s greatest pleasures. Mixing, kneading, resting and proofing. A multi-step process where patience is rewarded with pleasant aromas and delicious bread. In this WSQ certified Fundamental Bread Preparation course, you will learn five bread recipes, all vegetarian friendly! Our expert chefs will share knowledge on bread making tools, equipment, baking ingredients and weighing formulations. You will gain practical skills in handling knives, shaping doughs, piping toppings and bread preparation sequence.

Learning Objectives
- Explain the types and uses of baking tools and equipment, and assemble them for bread preparation
- Explain the types, characteristics, functions and quality indicators of baking ingredients, and assemble the correct ingredients in accordance to the recipe
- Explain the application of ratios and proportions when weighing ingredients, understand the importance and use of baker’s mathematics, and weigh ingredients for bread preparation in accordance to the recipe
- Demonstrate the methods and techniques of handling knives for bread products
- Demonstrate the methods to prepare and shape pre-mixes, frozen and bake-off products and doughs into a variety of shapes with different fillings in accordance to manufacturer’s instructions
- Demonstrate bread preparation sequence in accordance with the industry standards
