Course Overview

Course Curriculum
Covering a total of 300 hours across 11 carefully curated core modules. Students will gain an unshakable foundation in pastry and baking arts.
Food & Hygiene Introduction:
- Introduction to Baking and Food Safety
- Quick Bakes and Specialty Coffee
Bread Modules:
- WSQ Make Basic Bread
- WSQ Make Café Style Bread
Cake Modules:
- WSQ Make Basic Cake
- WSQ Prepare Advanced Cakes
Pastry Modules:
- WSQ Make Yeast-Raised Pastries
- WSQ Make Tarts and Short-Crust Pastries
- WSQ Make Choux Pastries
Culinary Modules:
- WSQ Basic Dim Sum
- WSQ Prepare Advanced Peranakan Cuisines
Course Duration and Intake:
The Diploma in Pastry and Baking Arts program is available as an oncampus full-time or part-time program.
Full-Time : Completion in 4 months
Part-Time : Completion in 6 months
Entry Requirements
- At least 16 years of age
- Minimum of 3 GCE ‘N’ levels or equivalent or
- WSQ Workplace Literacy (WPL) level 5
qualification in Reading, Listening, Speaking
and Writing, or - Mature candidates (≥30 years old with 8 years
relevant work experience)
- WSQ Workplace Literacy (WPL) level 5
- English Proficiency
- C6 grade in GCE ‘N’ level English or
equivalent, or - Passed in BITC English Placement Test
- C6 grade in GCE ‘N’ level English or
